It debuted late last year and is named after legendary Houston matriarch Charlotte Baldwin Allen, who helped found the city. You won't see traces of its former incarnation as the DoubleTree by Hilton Houston Downtown, since millions of dollars were invested to transform the interior to feature sleek rooms and bold, playful dining areas. And it's not just for Bayou City guests. Locals frequent the hotel for its centerpiece restaurant: Rosalie Italian Soul, which is helmed by San Francisco celebrity chef Chris Cosentino.
